Christmas Ravioli

Asparagus and mushroom ravioli with a light cashew milk sauce, it’s delicious. I love any type of pasta and this was extremely easy, perfect for a week night dinner.

Ingredients
1/2 cup baby portobello mushrooms, quartered
1/2 cup asparagus, cut in 2 inch segments
1 clove garlic, pressed
1/2 tbs olive oil
1 packet cheese ravioli, cooked according to package
1 cup cashew milk
1/2 cup parmesan cheese
salt and pepper to taste

Directions

  1. Cook ravioli according to package with asparagus in the water as well
  2. Meanwhile sautee mushrooms and garlic in oil for 3 minutes
  3. Remove mushrooms and garlic from pan and add cashew milk, bring to a simmer and add parmesan cheese, stirring constantly
  4. When cheese has melted add mushrooms and asparagus to sauce, simmer 1 more minute.
  5. Plate ravioli and top with vegetables and sauce.

I enjoy cooking from scratch but it does not always have to be that way. This is a delicious way to add extra flavor and color to a package of ravioli. At Christmas time we always have a Christmas Fettuccine but I wanted to change things up this year and make this ravioli dish instead.

Breakfast Burrito

Mexican for breakfast, yes please ๐Ÿ™‚ This is a fabulous weekend breakfast.

Ingredients
1 tortilla
2 scrambled eggs
2 tbs cheese, shredded
1/4 cup boca crumbles with black beans
4 cherry tomatoes, cut in half
2 tbs greek yogurt
1 handful spinach
1 tbs salsa

Directions
1. Scramble eggs and top with cheese
2. Mix salsa with boca crumbles and heat
3. Plate breakfast burrito: tortilla, yogurt, spinach, eggs, tomatoes, boca
4. ENJOY ๐Ÿ™‚

World Vegetarian Day – This Saturday, October 1

I have been recruiting people to join in World Vegetarian Day. Please join me for a meal or then entire day! So far I have recruited 15 non-vegetarians and I am so excited they are participating. It’s important for us to spread the word about a vegetarian lifestyle and I appreciate all my friends and family that support me. Thank you all!!


Every year on October 1 I make a special vegetarian feast and sometimes it’s a vegan feast. I will be posting my meal and recipes next week.

Happy Labor Day!

Happy Labor Day! I hope you are all enjoying time with friends and family relaxing outside. Fall will be here before we know it, lets all get outside and enjoy the Sunshine today!!

Spring Sandwich

Veggie Sandwich

Whole Wheat Bread
Slice Tomato
Lettuce
Pickles
Kale Spouts
Sliced Avocado
Hummus

Toast your bread (if desired), smash the avocado slices on one piece of bread with a fork and spread hummus on the other piece. I love using avocado and hummus in my sandwiches and wraps, it adds great texture and flavor. Layer veggies and enjoy!

Quinoa and Veggies

Quinoa and veggies is a great easy dinner or lunch. I love using my rice cooker to make a big batch of quinoa for the week and make different dishes with it. I also eat it for breakfast with nuts and dried fruit, it is one little versatile grain.

Quinoa and Veggies

Ingredients
quinoa, cooked according to directions
kale and spinach
orange pepper, diced
yellow onion, diced
button mushrooms, quartered
yellow squash, diced

Directions

  1. Cook quinoa according to directions
  2. Heat a skillet over medium heat with 1 tbsp of water add onion and sautee 2 minutes
  3. Add peppers, squash and mushrooms, sautee 3 minutes stirring frequently
  4. Add kale and spinach continue to sauteeย  for 2-3 minutes until wilted
  5. Add spices, your choice, I added black pepper, dill and oregano
  6. Plate veggie on top of quinoa and enjoy! I like to add hot sauce for a kick ๐Ÿ™‚

 

Little Village

Restaurant Shout Out!! The Little Village in Historic St Andrew’s is FANTASTIC! They have live local music, Finn’s Restaurant and an adorable little hippie shop. I had their veggie tacos which were marvelous, see for yourself:

Little Village Taco

Sweet potato, black bean, cabbage, lettuce, tomato, cilantro and fresh squeezed lime. I would highly recommend the Little Village to anyone in the area, its a great place to unwind, relax and enjoy great company.
