Quinoa and Veggies

Quinoa and veggies is a great easy dinner or lunch. I love using my rice cooker to make a big batch of quinoa for the week and make different dishes with it. I also eat it for breakfast with nuts and dried fruit, it is one little versatile grain.

Quinoa and Veggies

Ingredients
quinoa, cooked according to directions
kale and spinach
orange pepper, diced
yellow onion, diced
button mushrooms, quartered
yellow squash, diced

Directions

  1. Cook quinoa according to directions
  2. Heat a skillet over medium heat with 1 tbsp of water add onion and sautee 2 minutes
  3. Add peppers, squash and mushrooms, sautee 3 minutes stirring frequently
  4. Add kale and spinach continue to sautee  for 2-3 minutes until wilted
  5. Add spices, your choice, I added black pepper, dill and oregano
  6. Plate veggie on top of quinoa and enjoy! I like to add hot sauce for a kick 🙂
