Kale Salad

Super power kale!! Packed with Vitamin A & C is a magical leafy green and is so versatile. Make a salad, sautee it with other veggie, add it to smoothies, it really is a super POWER food!! Try eating kale once a week for a month, it’s so easy to cook with and has end options of cooking!

Kale Salad

Ingredients

2 cups kale, chopped
1/2 cup chickpeas
1/2 cup red pepper, chopped
1/4 pecans
Dressing:
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp lemon juice
2 tsp turmeric

Directions
1. Mix dressing set aside
2. Mix all ingredients except kale and toss with half the dressing.
3. Massage kale with remaining half of dressing.
4. Plate kale and top with beans mix.
Enjoy!

You can make this salad the night before as well, the kale will hold up just fine with the dressing.
