Pesto Pasta with Chikin

I could probably eat pasta every night but that would not go well, hee hee. I found these cool noodles at an Italian Market in town, Lasagnette, they are mini pieces of lasagna pasta, so fun! I love going to the market to see what new goodies can be found 🙂


1 bag baby spinach
1 bag Quorn Chikin Strips, thawed and diced
8 oz Lasagnette Pasta, cooked according to directions
4 tbsp Trader Joe’s Pesto
2 tbsp red pepper flakes
parmesan cheese, optional

1. Cook pasta according to directions
2. Heat large sautee pan over medium heat, add a tbsp of water, spinach and chikin strips. Cover with lid and cook about 5 minutes, stirring occasionally.
3. In a large bowl mix, cooked pasta, spinach, chikin, pesto, red pepper flakes and parmesan cheese if you are using it. Toss to mix coat pasta with pesto. If you prefer you can add more olive oil or pesto. I don’t like my pasta swimming in the sauce.
