Tofu, Green Beans and Sweet Potato-Banana Mash

Yummy! How can you go wrong with sweet potato, banana mash? Ya can’t! I wanted to do our sweet potato mash a little different and it turned out fabulous, I hope you enjoy! Happy Eating! 

Tofu, Green Beans

 

Ingredients

1 sweet potato, diced
1 banana, peeled and sliced
1 tsp cinnamon
1 tsp red pepper
3 big handfuls of green beans, trimmed
1 tbsp lemon pepper
1 tbsp lemon juice
1 avocado, diced
8 oz tofu, diced
1 tbsp olive oil
2 tbsp black pepper
salt to taste

 

Directions by dish:

  1. In a small sauce pan boil water and add sweet potato, cook on medium for 10 minutes. Once potato pierces easily with a fork, drain off water. Add banana, cinnamon and red pepper. Get mashing 😉
  2. Heat olive oil in sautee pan over medium heat, add tofu and black pepper and salt. Sautee for 5 minutes and flip tofu, continue cooking additional 5 minutes.
  3. Steam green beans for 4 minutes until al dente (we like them a little crunchy). If you don’t have a steamer boil for 2-3 minutes. Place in bowl and toss with lemon pepper and lemon juice.

Once you are plating your simple and very quick dinner top tofu with diced avocado. This is a fast easy dinner for two!
