We love fajitas, tacos, tostadas and burritos in our house and have fun mixing up the ordinary recipes we use. This particular fajita recipe features delicious lime tofu!! YUM 😉
1/2 block extra firm tofu, squeezed/pressed and slice into strips
1/2 yellow onion, sliced into strips
1 green bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
4 red baby bell peppers, sliced
1 tbsp olive oil (to sautee veggies)
1/4 cup fresh lime juice
2 tbsp garlic infused olive oil
1 tsp hot sauce
1 tsp red pepper
Greek Yogurt (in place of sour cream)
- Mix tofu marinade with tofu and let sit 30 minutes to overnight.
- Sautee tofu and marinade over medium heat for 10 minutes, flipping every few minutes.
- While tofu is cooking, sautee veggies in olive oil, stirring frequently. Let vegetables sit for a few minutes to brown in the oil.
- Heat corn tortillas in microwave for 30 seconds or on the stove top in the veggie pan for 30 seconds each side.
Plate fajitas to your liking and enjoy!!
