Kale Salad, Polenta with Horseradish and Mango Salsa and Veggie Sausage

BABY KALE! BABY KALE! BABY KALE!!!

Quick and Easy dinner for one or two if you double it 🙂

Spicy Polenta

 

2 handfuls baby kale

4 orange grape tomatoes, sliced in half

1 tsp red pepper flakes

1 tsp olive oil

1 tsp lemon juice

1 tsp parmesan cheese, shredded

2 slices of polenta

1 tsp horseradish

2 tbsp mango salsa, trader joe’s is my fav!

1 veggie sausage, field roast or tofurky

Directions:

  1. Combine: kale, tomatoes, red pepper, olive oil, lemon juice and cheese in bowl and massage kale with hands or tongs, to coat the kale with the dressing.
  2. Heat a drop of oil in a sauté pan and sauté polenta for 2 minutes on each side.
  3. Warm up on veggies sausage/brat and slice.

Plate: Kale salad, sliced veggie sausage topped with mango salsa, polenta topped with mango salsa and horseradish. YUM-O
