Cheesy Polenta Bake with Mushrooms

Polenta Bake

1 tube polenta, sliced 1/2 inch thickness

1 cup Portobello mushrooms, chopped

1 cup favorite tomato sauce or marinara

1/2 cup mozzarella cheese, shredded

Fresh herbs: dill, oregano, cilantro, whatever you like J

Directions

  1. Preheat oven to 350 degrees
  2. In a small bake dish pour a 1/4 cup of sauce, top with sliced polenta, mushrooms, fresh herbs, remaining sauce and cheese.
  3. Bake for 25 minutes and enjoy!
