I’m loving energy balls! They are super easy to make and are the perfect quick snack to keep you going. Plus there are so many different ways to make them with lots of yummy ingredients.
1 cup rolled oats (gluten free)
1/2 cup dates, pitted
1/4 cup cranberries, dried
2 tbsp flax seed
2 tbsp coconut, shredded
2 tbsp strawberry jam
1 tbsp agave
1/4 cup peanut butter
- In a food processor combine: dates, cranberries, flax seed and coconut. Pulse for 1 minute until dates are in small chunks and ingredients stick together.
- In a large bowl add date mix and remaining ingredients, stir together and chill 15 minutes.
- Roll into small balls and place in refrigerator until ready to eat. These are sticky balls and if they stay refrigerated they hold their shape better. Enjoy J
