Channel New Orleans!!! I love cooking with Cajun spices, there is so much flavor!! Enjoy the spices of Life!!!
3 cups cooked brown rice
1 cup boca crumbles
1 can black beans, rinsed and drained
1/2 yellow onion, sliced
1 cup sweet baby peppers, sliced
4 tbsp Cajun spices
1 tbsp spicy olive oil
Greek yogurt, optional
hot sauce, optional
- Heat spicy olive oil in a pan and sautee onion, peppers, beans, boca crumbles and Cajun spices for 5-7 minutes until onions are translucent.
- Combine sautéed veggies and boca with cooked brown rice in large bowl. If you prefer it spicier, add more Cajun spice and red pepper.
- Scoop dirty rice into bowls and top with Greek yogurt and hot sauce if you like. DELICIOUS!!
