Cajun Style Dirty Rice with Black Beans

Channel New Orleans!!! I love cooking with Cajun spices, there is so much flavor!! Enjoy the spices of Life!!!

Dirty Rice

Serves 4

3 cups cooked brown rice

1 cup boca crumbles

1 can black beans, rinsed and drained

1/2 yellow onion, sliced

1 cup sweet baby peppers, sliced

4 tbsp Cajun spices

1 tbsp spicy olive oil

Greek yogurt, optional

hot sauce, optional

Directions

  1. Heat spicy olive oil in a pan and sautee onion, peppers, beans, boca crumbles and Cajun spices for 5-7 minutes until onions are translucent.
  2. Combine sautéed veggies and boca with cooked brown rice in large bowl. If you prefer it spicier, add more Cajun spice and red pepper.
  3. Scoop dirty rice into bowls and top with Greek yogurt and hot sauce if you like. DELICIOUS!!
