Quiche is a wonderful breakfast when your entertaining guests; it easily serves 4-6 people. We enjoy the leftover quiche for dinner or will pack it for lunch. Sometimes we top our quiche with Greek yogurt or sriracha sauce or extra salsa, it is so versatile! Enjoy 🙂
Makes one pie
1 ready pie crust
1 cup boca crumbles
1/2 cup green bell pepper, dice
2 tbsp salsa
1 cup sharp cheddar cheese, shredded
1 cup soy milk, unsweetened
2 tbsp paprika
1 tbsp chili powder
1 tsp sea salt
- Pre heat oven to 375 degrees.
- In a large mixing bowl beat eggs and soy milk.
- Add remaining ingredients to eggs and mix until combined.
- Pre bake crust if indicated in directions, once crust is ready pour egg mixture into crust and bake 35 to 45 minutes until eggs are cooked throughout.
- Serve with fresh fruit!
