I love peeling zucchini into “noodles” it’s a great gluten free options and you can add anything to them! Be creative and add your favorite pasta additions to zucchini.
2 zucchini, washed and peeled
1 yellow bell pepper, diced
1/4 cup red onion, diced
10 red cherry tomatoes
2 handfuls baby spinach
1 clove garlic, pressed
1 tbsp Italian seasoning mix, gluten free
1 tbsp herb infused olive oil
1. Heat olive oil in large sauté pan over medium heat. Add pepper, onion, tomatoes, garlic and seasonings. Stirring occasionally, cook 3 minutes.
2. Meanwhile with a vegetable peeler, peel zucchini into thin slices over pan, adding to mixed vegetables. Peel the zucchini down to the seeds, discard center with seeds. Once both zucchinis are peeled, add spinach and sauté additional 3-4 minutes. Vegetables should be bright and zucchini will become translucent.
