Creamy Rice and Tomato Seasoned Tofu with Salad

I love the creations that happen in the moment with what you have in the house, this combination is one of them. If you have never cooked with a tomato powder I would highly recommend it. I found it at our local spice shop. It adds great flavor to any dish and the tofu picks it up nicely. If you ever need tomato paste you can mix this powder with water to create it.

Salad with Tofu and Rice

Serves 1

Rice

1/2 cup brown rice, cooked

2 tbsp Greek yogurt

1 tsp black pepper

1 tsp tomato powder

1 tsp habanero sea salt

Tofu

1/3 block firm tofu, cubed

1 tbsp white truffle oil

1 tbsp tomato powder

1 tsp Italian seasoning

1 tsp black pepper

2 tsp Persian chili powder

Salad

3/4 cup bib lettuce

1/4 cup arugula lettuce

1 radish, sliced

6 cherry tomatoes, sliced (red and orange)

2 button mushrooms, diced

1 tsp dill weed

1 tsp Italian seasonings

fresh cracked pepper

1 tbsp dried bread or croutons

1 tbsp Annie’s Roasted Red Pepper Dressing

 

Directions

  1. Combine all ingredients under rice, mix completely and keep warm over low heat.
  2. Heat oil in medium sauté pan, add tofu, spread evenly and top with all spices. Toss tofu to coat with oil and spices. Cook covered over medium heat for 10-14 minutes, stirring and flipping tofu frequently. More oil may be needed to keep the tofu from sticking to the pan, add a 1 tsp at a time.
  3. Combine all salad ingredients except dressing and toss to mix. Top with dressing once plated.
  4. Plate salad on half of the plate and rice topped with tofu on other half and enjoy!
