Tomato Sandwich with Pesto Pasta Salad and Extra Tomato :-)

Tomato sandwiches are a favorite of mine in the summer. I love them with a touch of seasoning salt or fresh herbs like dill, cilantro or basil. The sandwich pairs great with this pesto pasta salad, it just makes me think….Picnic!! Happy Summer!

Tomato Sandwich with Pasta Salad


1 slice whole wheat bread

1 tsp vegan mayo

1 whole tomato, sliced

1 tsp lawyers salt


  1. Spread mayo over bread and cut in half. Layer tomatoes on bread and top with Lawyer’s salt and additional half of bread. Enjoy J

 Pesto Pasta Salad

(Yes, this is the same recipe from my 4th of July post, I just love, love, love this pasta salad!!)

Serves 8

8 oz tri color pasta spirals, cooked according to package

7 oz jar of basil pesto

1/4 red wine vinegar

1 tsp Pink Himalayan Sea Salt

1 can cannellini beans, rinsed and drained

1 cup cherry tomatoes, sliced in half

1/4 cup fresh basil leaves, torn in pieces

2 cloves garlic, minced

1 tsp cracked pepper

1/4 cup Parmigiano-Reggiano cheese, shredded


  1. While pasta cools in a large bowl combine all ingredients except cheese, stir well.
  2. Add pasta to mixture and toss to coat pasta with dressing.
  3. Top with Parmigiano-Reggiano cheese and serve.
