I love a good salad, especially once the weather starts getting warm and more fruits and vegetables come into season. This hearty salad will fill you up and keep you going, I hope you enjoy!
2 cups bib lettuce
1/4 cup cooked cous cous, cooked according to directions
1 tbsp dried cranberries
2 tbsp slivered almonds
2 tbsp green pepper, diced
2 tbsp roasted red pepper dressing ( I like Amy’s Brand)
Fresh Cracked Pepper
- Combine all ingredients in a bowl and toss to coat with dressing.
- Serve immediately or pack for a delicious lunch on the go.
