Roasted Salsa

Chips and salsa is my all time favorite snack! I like to substitute fresh veggies or make veggie chips to dip in the salsa instead of tortilla chips all the time. My favorite veggie with this salsa is endive lettuce, it’s simple and scoops the salsa perfect!!

Roasted Salas

Serves 4

12 roma tomatoes, halved

1 orange bell pepper, halved

4 poblano peppers, halved

2 jalapeño pepper, halved

½ yellow onion, sliced in rounds

¼ cup cilantro, finely chopped

¼ cup chives, diced

1 tbsp olive oil

Directions

Place all vegetables on a pan, drizzle with olive oil and roast at 450 degrees for 25 minutes until veggies are charred. Allow vegetables to cool 10 minutes, place in food processor with cilantro and chives, pulse to combine ingredients and chop vegetables. Transfer to bowl and cool another 20 minutes, serve immediately with carrots, endive lettuce, zucchini and squash chips or your favorite tortilla chip.

Try Donkey Tortilla Chips available at your local grocery store or Trader Joe’s Sweet Potato Chips.
