Quinoa with Sun Dried Tomatoes and Mushrooms

Yum! Quinoa is so delicious, I love making this dish and packing it for lunch the next day. It fills me up and gives me plenty of energy to finish my afternoon.

Quinoa

Serves 2

1 cup uncooked quinoa, cooked according to directions

8 button mushrooms, quartered

1/2 bag sun dried tomatoes, largely chopped

1 clove garlic, pressed

1 tsp mushroom and sage olive oil (or EVOO)

1 tbsp all purpose spice

Directions

Cook quinoa as directed by package. Saute mushrooms, garlic and tomatoes in oil for 2-4 minutes. Combine quinoa with mushroom mix and all purpose spice. Serve immediately or pack a lunch for tomorrow!
