Mushroom, Kale and Boca Spaghetti

Pasta is an easy comfort food for our house. I love to mix up a traditional spaghetti with added vegetables and boca crumbles. Get creative with your go to pasta dish and spice it up with extra veggies or literally spice it up with red pepper flakes, anything that sounds good to you!

Spaghetti with Kale, Boca

Serves 2

8 oz thin spaghetti

2 cups kale, chopped, stems removed

8 button mushrooms, quartered

1 cup boca crumbles

1 tsp red pepper flakes

2 cups spaghetti sauce, use your favorite


Cook spaghetti according to package, in the last 2 minutes of cooking add kale and continue cooking pasta. Meanwhile saute mushrooms in 1 tbsp of water for 2 minutes. Add red pepper flakes, boca crumbles and 2 tbsp of spaghetti sauce and saute for 2-4 minutes until mushrooms are cooked and boca is heated. Drain pasta/kale and return to pan and toss with sauce and mushroom/boca mixture. Serve with your favorite garlic bread or toast.
