Lemon Pasta

The first time I made this I immediately feel in love with the flavors! This is such an easy pasta recipe to make for several people or just for one. The fresh lemon taste reminds me of springtime.  I hope it brings a little sunshine to your dinner plate 🙂

Lemon Pasta

Serves 2

1/3 of a box of thin spaghetti (or your favorite noodle)

2-3 tbsp extra virgin olive oil

2 clove garlic, pressed

1 lemon, juiced

fresh cracked pepper

2 tbsp grated vegan parmesan cheese, optional


Cook pasta according to the box, drain and return to pot. Add oil, garlic, lemon juice and pepper. Toss to coat noodles, plate and top with vegan parmesan cheese.

Since this recipe has simple flavors you can use a flavored olive oil to add a more bold taste. Possible a tuscan herb or mushroom and sage, try anything that sounds good to you. Playing with your recipes in the kitchen is how you get more comfortable with improvising and making each recipe your own. Let the experiments begin 🙂
