Veggie Shepard’s Pie and Beer Bread

Happy St Patrick’s Day!!

I love to create meals around holidays and celebrations, so for St Patrick’s Day I have a delicious Shepard’s Pie and Beer Bread recipe for you. Also, I like scotch & whiskey and in honor of St Patrick’s Day I paired my dinner with Kilbeggan Irish Whiskey, it was a perfect combinations. The Kilbeggan is smooth and has almost a sweet taste with hints of vanilla and almond, I would recommend trying it! I hope you all enjoy my Veggie Shepard’s Pie and Beer Bread recipes. Cheers!!

St Patrick's Day

Veggie Shepard’s Pie

Serves 4

Mashed Potatoes

1 1/2 lbs yukon gold potatoes, peels and diced

2 tbsp vegan butter

2 tbps chives

3 tbsp horseradish

4 tbsp extra sharp cheddar, shredded

Filling

1 lg carrot, diced

1 med yellow onion, diced

1 lb baby portabello mushrooms, sliced

1 lb button mushrooms, sliced

1 cup kale, chopped

1/2 cup extra sharp cheddar, shredded

2 cloves garlic, pressed

2 tbsp tomato powder

2 tsp rosemary powder

Directions

Pre-heat oven to 375 degrees. Roast carrots, onion and mushrooms on a baking sheet for 25 minutes, stirring half way through. While vegetables are roasting prepare mashed potatoes. Boil potatoes for 10-15 minutes until tender, drain liquid and place potatoes in bowl. Add butter, chives and horseradish to potatoes and mash until smooth. Once vegetables are done roasting add all of the filling ingredients into large baking dish with 1 cup of mashed potatoes and mix together. Top with remaining mashed potatoes and 2 tbsp of extra sharp cheddar cheese and back 10-15 minutes until hot and cheese is melted.

Enjoy with a nice pint or an Irish Whiskey 🙂

Shephards Pie Shepards Pie-Mashed

Beer Bread

Makes 1 loaf

3 cups flour

3 tsp baking powder

1 tsp salt

1/4 cup sugar

1 12oz beer (I like to use a darker beer)

1/2 cup melted vegan butter

1 tsp dill weed, dried

1 tbsp chives, dried

Directions

Preheat oven to 375 degrees. Mix the dry ingredients and the beer and pour into a greased loaf pan. Top with melted butter then sprinkle with dill and chives. Bake for 1 hour, remove from oven and allow bread to cool. Slice and serve with your homemade Veggie Shepard’s Pie!
