This is a simple and delicious appetizer for two or meal for one. I choose yellow bell pepper for this recipe however you can use red or orange as well. I feel like I should be in Italy when I eat this, it’s amazing, I hope you enjoy it!
1 yellow bell pepper, largely diced, 1×2 inches
4 cloves garlic, pressed
1 tbsp white truffle oil
1 tsp sea salt
1 tbsp fresh cracked pepper
1 small Italian bread loaf, sliced
Heat oven to 350 degrees. Toss all ingredients (except bread) in a baking dish, coating the peppers. Cook for 30 minutes stirring after 15 minutes. Reduce oven temperature to 300 degrees and continue cooking 15 more minutes. Peppers with be very soft, almost spreadable. Plate peppers with bread and serve. You can also add fresh mozzarella or parmesan cheese. Enjoy
