Beet, Avocado, Quinoa and Spinach Salad

I love beets and could eat them everyday! This salad is simple but filled with flavors and it holds up well the next day; even with vinegar and olive oil! The avocado adds a delicious creaminess, while the quinoa pops in your mouth, lots of texture here. I hope you enjoy and have a wonderful day!

Beet, Avocado, Quinoa Spinach Salad

Serves 2

1 avocado, diced

2 beets, cooked, peeled, diced

1/2 cup Quinoa, cooked

4 cups baby spinach

1/4 cup red onion, diced

4 tbsp blue cheese crumbles

1 tbsp extra virgin olive oil

2 tbsp white balsamic vinegar

fresh cracked pepper

1 tsp dill weed

Directions

Combine all ingredients in large bowl and toss to coat veggie with olive oil and vinegar, plate and enjoy!
