Light Fettuccine Alfredo and Salad with Texas Toast

Christmas Fetticini

Serves 2

This is a fun Date Night Dinner!

House Salad

3 cups mixed greens

8 cherry tomatoes, sliced in half

2 mini cucumbers, sliced in half moons

2 oz blue cheese crumbles

4 tbsp blue cheese dressing

Fresh cracked pepper

Directions

Plate greens and top with tomatoes, cucumbers, crumbles, dressing and fresh cracked pepper.

Fettuccine Alfredo

6 oz fettuccine noodles

3 tbsp reduced fat cream cheese, soften, diced

1/2 cup parmesan cheese, shredded

1/2 cup almond milk, unsweetened

1 clove garlic, diced

1 tsp white pepper

red pepper flakes

Directions

Bring water to boil and add noodles, cook according to packet. In a sautee pan add milk, garlic and white pepper, bring to a simmer. Add both cheeses, stir frequently to melt cheese. Once mixture is melted pour over drained noodles, toss and serve immediately. Top fettuccine with red pepper flacks is desired.

Texas Toast

Choose your favorite texas toast or garlic bread and cook according to directions on package.
