Jalapeño & Gouda Mashed Yukon Gold Potatoes

Gouda Yukon Gold Mashed Potatoes

Serves 4

6-8 yukon gold potatoes, diced

1 jalapeno, diced with seeds

4 oz gouda cheese, diced

2 -4 tbsp soy milk

salt and pepper

Directions

Preheat oven to 350 degrees. Boil potatoes for 10 minutes until tender, drain and place in oven safe casserole dish. While potatoes are boiling saute jalapeno in water for 3 minutes.  Add jalapeno and soy milk to potatoes, mash with potato masher to desired consistence, adding more milk if needed. Stir in Gouda cheese, cover and place in oven for 10 minutes. Stir cheese into potatoes, top with salt and pepper and serve immediately.
