1 sm cantaloupe, cut in bit size squares
1 sm eggplant, quarter, then thinly sliced
1/4 cup soy sauce
1 tbsp brown sugar
1 tsp liquid smoke
salt & red pepper to taste
Whisk all marinade ingredients together, add eggplant and let stand at least 30 minutes. Saute marinated eggplant for 1-2 minutes on each side until warm. Wrap a piece of cantaloupe with eggplant and skewer with toothpick. Serve immediately.
