Quick Vegan Chili

Chili Close Up

Serves 8

3 cans diced tomatoes, fire roasted or chili ready

1 20 oz can tomato puree

1 can kidney beans, dark, drained and rinsed

1 bag boca crumbles

1 green pepper, diced

1 yellow onion, diced

2 jalapeño peppers, diced

2-4 tbsp chili powder

Topping Options

vegan sour cream

vegan shredded cheddar cheese, tossed with taco season

chives, diced, raw

jalapeños, diced, raw

chili powder

tortilla chips


Set crock pot at high for 2 hours; add tomatoes, tomato puree, beans and chili powder, cover. Meanwhile sautée peppers and onion in 1 tbsp of water for 5 minutes, add boca crumbles sautée additional 5 minutes stirring frequently, add additional water if need to not burn boca crumbles. Add peppers, onions and boca to crock pot, cover and let simmer, stir every 20 minutes until time expires. Serve immediately; add additional toppings as desired.

We love spicy food in our house and usually add extra chili powder and raw jalapeños; there is nothing better than watching a football game with a warm bowl of chili in the fall!
