Cajun Greens with Quinoa

Cajun Greens

This spicy dish will fill your stomach and your soul!

Serves 4

6 oz baby spinach

8 oz kale, chopped, stems removed

1 ½ cups cooked quinoa

1 ½ cups red kidney beans

¼ cup yellow onion, diced

4 oz brie, diced

2 tbsp red pepper, ground

1 tbsp Cajun or creole seasoning

3 cloves garlic, pressed

½ cup mushroom broth

1 oz water

Directions

Sauté onion in water until softened. Add mushroom broth and steam greens until color becomes bright green and leaves begin to wilt. Add quinoa, beans, brie and spices, reduce heat to low, cover and simmer for 5 minutes until brie is soft. Mix with tongs and serve immediately.
